A breakfast 'go-to' meal that will get you through the day

"Shakshuka" is a middle eastern dish and when I say it, people often give me a strange look, as if I’ve sneezed or something. If you aren’t familiar with it, I’m thrilled to introduce it, a simple, go-to meal that works as a breakfast.
Then there is an evening beverage - coffee. It's a brewed drink prepared from roasted coffee beans which contain caffeine that helps keep us alert and awake. Coffee is actually very healthy and is loaded with antioxidants and beneficial nutrients that can improve our health.
And then there is shrimp, a seafood that is consumed worldwide. Shrimp can be a unique source of antioxidants and is also an anti-inflammatory. Tastes divine when combined with sauteed veggies .
EGG SHAKSHUKA
SERVES:2
Cooking and Preparation time: 15 minutes
INGREDIENTS:
1 onion
2 teaspoons cumin seeds
2 to 3 curry leaves (BAY LEAVES? HAVE YOU EVER HEARD OF CURRY LEAVES?)
2 medium tomatoes
seasonal chopped veggies (any)
salt as required
1 teaspoon of paprika powder
METHOD:
1) Saute chopped onion in a wok.
2) Add a teaspoon of cumin seeds and curry (BAY?) leaves
3) Let it sizzle
4) Chop tomatoes and saute well .
5 )Add seasonal veggies ,salt and paprika powder and cook well.
6) Let it cook for a minute more .
7) Now add an egg over it and cover it with a tight lid for almost a minute.
8) Dish it out and enjoy.
HOT DARK CHCOCOLATE MINT COFFEE with SEMOLINA and COCONUT COOKIES
Serves 2
Cooking and Preparation time:15 minutes
COFFEE:
INGREDIENTS:

2 cups of milk
1 teaspoon of cinnamon powder
2 mini-bars of dark mint chocolate
1 teaspoon coffee powder
METHOD:
1) Bring 2 cups of milk to boil.
2) Add cinnamon powder to milk.
3) Add dark mint chocolate mini-bars and 1 teaspoon of coffee.
4) Mix and stir well.(You may use a hand beater)
5) Pour it into a cup and enjoy with cookies.
COOKIES:
Cooking and Preparation time:30 minutes
INGREDIENTS:
1cup of roasted semolina
1 cup of desiccated coconut
1 teaspoon of cardamom powder
1 egg
2 tablespoons melted butter
half cup of all purpose flour
1 teaspoon of baking powder
half cup of milk
1 cup of refined powdered sugar.
METHOD:
1) Put all dry ingredients in a deep bowl
2) Add baking powder and egg.
3) Mix lightly and add melted butter .
4) Mix everything together.
5) Add milk.
6) Knead it like soft dough.
7) Roll it with a roller; use a round cutter to give shapes and shallow fry in a pan.
STIR FRIED VEGETABLE AND SHRIMP COMBO
Serves 3
Cooking and Preparation time: 20 minutes
INGREDIENTS:
Half kg deveined shrimp
1 red onion
2 tablespoons of canola oil
1 garlic pod
1 teaspoon ginger powder
2 teaspoons light soya sauce
salt as required
Veggies: broccoli, corn, mushrooms,baby carrost (semi-boiled)
1 teaspoon crushed black peppers
1 tablespoon fresh lime juice
1 teaspoon veg masala
1 teaspoon seafood masala
Dry oregano leaves
Parsley leaves
METHOD:
1) Saute 1 chopped onion in 2 tablespoon canola oil .
2) Add finely chopped garlic and ginger powder
3) Now add half kg shrimp, soya sauce, 1 teaspoon salt, 1 teaspoon pepper and rest of ingredients.
4) Add chopped veggies of your choice.
5) Mix and cook well until all water dries up on high flame. (THE SHRIMP WOULD BE TERRIBLY OVERCOOKED IF YOU DID THIS BUT WHO AM I TO ARGUE?)
6) Sprinkle it with oregano and parsley leaves.
7) Enjoy.
