La Cucina introduces new menu

La Cucina, described as an ultra-fashionable and top-rated Italian restaurant of Al Faisaliah hotel, which is part of the Rosewood group of hotel in Riyadh, has introduced a new menu offering a ‘mouth-watering’ experience to its cosmopolitan visitors in the elite suites.
New items on the menu include Paccheri, a dish made with tube shape pasta, in a delectable eggplant and cherry tomato sauce served with rich burrata cheese, and the Trancio di salmon, a slow cooked salmon fillet served with a potato fondant and crunchy asparagus spears drizzled with basil oil.
According to newly appointed Chef de Cuisine Nicola Russo, the new menu serves the new appetite class, which is “truly an amazing dining experience of the fabulous Italian cuisine.”
Russo said: "As a chef who has traveled the world, I am very pleased to bring my global experience to bear at Al Faisaliah Hotel and feeling honored to present my new menu, playing on traditional Tuscan flavors.”
He brings with him more than ten years’ experience from all corners of the globe, including the homeland Italy and the UK.
Russo, a native Italy, captures authentic Tuscan flavors found in kitchens of village cottages across Tuscany and has brought it to Al Faisaliah elite suites.
Transforming the menu, Russo’s modern twists to classic Tuscan food has perfectly resulted in an array of dishes, including crisp caprese made from fresh basil leaves, juicy tomatoes and creamy buffalo mozzarella, while twists include the Uovo 64, an organic slow cooked egg served with crunchy green and white asparagus spears and mushrooms.
