Mirazur

Noma
Where? Copenhagen, Denmark Head chef Rene Redzepi is famous for his 20-course meals in this restaurant that divides the year into three seasons, during which the menu changes dramatically.
Asador Etxebarri
Where? Spain Chef Victor Arguinzoniz coaxes out explosive flavor from seemingly simple ingredients, most of which are grilled over an open hearth.
Gaggan
Where? Bangkok, Thailand Chef Gaggan Anand serves up a menu of 25 or more courses of small bites, many of which are eaten with the hands. The restaurant also won the Best Restaurant in Asia award.
Geranium
Where? Copenhagen, Denmark The unlikely duo of nature and technology is at the heart of chef Rasmus Kofoed’s progressive tasting menu: 17-plus courses of wild Scandinavian ingredients.
Central
Where? Lima, Peru Chefs Virgilio Martínez and Pía León’s flagship restaurant is a shrine to everything Peruvian. The husband-and-wife team was also awarded the Best Restaurant in South America.
