  • Saudi chefs take to social media during Ramadan to share easy, innovative recipes

RIYADH: Social media platforms are a go-to recipe finder for millions of people around the world, including Saudis looking for iftar and sahoor recipes.

Food bloggers have reported a surge in followers during Ramadan, encouraging them to create innovative, easy to cook recipes.

Alaa Alkhathlan has more than 100,000 subscribers on Instagram at @iberryki and over 600,000 on her YouTube channel at @Berry Kitchen where she spreads her passion for cooking and Saudi food.

She said: “Being committed to the things you love makes you inspired. I enjoy creating delicious recipes and inspiring videos that are easy to follow. Anyone who wants to be a good cook must do it repeatedly until they succeed. Sooner or later, they will.”

Yahya Al-Jaber from Jeddah has racked up more than 27,000 followers on his Instagram account @yahya.aljaber.

He said: “I believe that the field of cooking is a beautiful and creative world in which you can navigate and be creative and different, each in its own way.

Watching one recipe can lead to another recipe idea, or one can find inspiration from a snapshot of the three- minute video clip.

Al-Jaber grew up watching cooking programs on TV and then trying them out. At first, the results were not always successful, but through trial and error he found a way. During Ramadan, he creates content that is quick and simple to follow.

One of her followers, Sara Ali, said: “She has the most easy and creative way of cooking. Her recipes are so simple yet unique. Every Ramadan it has turned into a ritual for me to constantly follow her and dig in for some new ideas for cooking.”

Fatimah Ahmed, from Jeddah said: “Most of the food bloggers share the food products they use to make the dishes. It gets so easy for us to follow and motivates us to try our hands at creating those recipes.

“They inspire and get us hooked to their pages especially during Ramadan when we are searching for easy and innovative recipes every day.”

Ahmed’s favorite food bloggers to follow in Ramadan on Instagram are Wejdan Mohammad (Wejdan_mohammad_1), Hadeel Bokhari (hadeel.bokhari), and Mohammed Inani (Moe_inani).

Another food blogger, Ahmed Saeed, said: “I learn a lot from other food bloggers and chefs around the world. Social media has given the opportunity to explain the recipes in the most methodical and quick way, in turn making it simpler for understanding.”

He practices his recipes several times before presenting them to his followers.

Saudi chef Haifa Alshammari, who is based in Al-Khafji, runs a catering business from home via Instagram at @delicious_kfj. With more than 5,500 followers, she said: “I used to watch cooking videos, then decided to make these dishes myself.”

She noted that social media was a useful tool to promote her business as customers could watch her meal preparations.

One of her most popular dishes is pasta with mushroom and chicken. Here is the recipe: Boil the macaroni. In another pot, add butter and chicken breast (cut into small pieces) and leave it on a low heat for seven to 10 minutes.

Add mushrooms, thinly sliced onions and zucchini, carrots, and bell peppers. Stir over a low heat for 10 minutes. Add sliced black olives, cooking cream, a pinch of black pepper, salt, a little Parmesan, and mozzarella cheese. Then add the boiled pasta.

Hatoon Al-Toukhi is a Saudi chef with 15 years’ experience in Italian cuisine. Married into an Italian family, she learned how to cook authentic Italian food from her mother-in-law.

She runs workshops in Jeddah teaching Italian cuisine using recipes from her Instagram account.

Al-Toukhi said: “I try to offer something unique, having specialized in authentic Italian cuisine.”

She has more than 28,000 followers on Instagram at @hatoonaltoukhi which meant she had to constantly innovate to keep them engaged. “For influencers, Ramadan is our season, a time for innovation of recipes and videos. Through my accounts, I give alternatives to recipes, and I teach recipes that are easy to make.”

On the difference between being a chef on social media or in a restaurant, she said: “It’s different because I choose what I cook on social media. I choose the recipes. And I go authentic.”

For example, she pointed out that the Italian way to make fettuccine alfredo is quite different to the mainstream method. “Italians don’t use cream or add chicken to their pasta,” she explained. Here is her recipe done the Italian way:

For the pasta dough, use two cups of flour, four fresh eggs, and a pinch of salt. Mix the ingredients together and let the dough rest for at least 30 minutes. Roll out the dough and shape it to the size of fettuccine in the pasta machine and sprinkle it with a little flour so that it does not stick together.

To make the sauce, use two tablespoons of butter, one cup of grated Parmesan cheese, two cloves of garlic, and one stick of rosemary. Melt the butter, add the garlic and rosemary, and fry them a little until the rosemary turns brown. Remove it from the butter so as not to burn it.

Boil the water, add salt, pasta, and let it boil for two minutes or until it floats on the surface of the water. Remove the pasta from the water and mix it with the butter, keeping aside the boiling water of the pasta to use in the sauce.

Add some salt to the pasta, half the amount of the Parmigiano, and some boiling water and stir the pasta, then add the rest of the cheese and water again until the consistency of the mixture becomes creamy.

Mom-of-three Jouhaina Alhoumaidan studied cooking in Kuala Lumpur, Malaysia, and is specialized in French cuisine. She is now working at a Michelin-starred restaurant in Malaysia and runs cooking tutorials on Instagram at @jouhainaalhoumaidan.

She started in 2017 by sharing healthy recipes from home. After that, she decided to study cooking to develop her skills. She believes a cook must follow specific rules when working at a restaurant such as delivering dishes for customers at a specific time and manner. “Working at restaurants is challenging.”

Working on social media was more flexible giving chefs the freedom to be creative, she said.

“I received so much support from people when I started. These people helped me gain more confidence through their trust in my skills. I felt the obligation to give back,” she added.

Alhoumaidan pointed out the need for chefs to continuously experiment with new flavors to improve their style of cooking and techniques.

JAZAN: Saudi Border Guards foiled an attempt to smuggle 80 kilograms of qat in Al-Aridah governorate in Jazan region, officials said.
In a separate incident, a Saudi citizen in Qurayyat, in Al-Jawf province, was arrested for allegedly selling hashish and methamphetamine. The case has been referred to the relevant legal authorities.
Elsewhere, monitoring teams from the Ministry of Commerce office in Asir, in cooperation with local police, raided a factory in Khamis Mushayt for failing to comply with regulations. Officials said it was producing and selling counterfeit household cleaners that did not meet required national standards, and used undocumented labor in violation of residency and employment regulations in the Kingdom.
During the raid, the officials added, the teams arrested a number of undocumented laborers who were manufacturing more than 37,000 containers of poor-quality household cleaners, on which were placed labels resembling those of legitimate brands.

RIYADH: Saudi Arabia’s Crown Prince Mohammed bin Salman received a written message from Chad’s President Mahamat Idriss Deby relating to bilateral relations between the two countries and ways to expand them in various fields.
The message was received by Saudi Deputy Foreign Minister Waleed Al-Khuraiji during his meeting with Chadian Ambassador to the Kingdom Hassan Saleh Algadam Aldjinedi on Thursday in Riyadh.
The two officials reviewed aspects of bilateral relations as well as issues of mutual interest, Saudi Press Agency reported.

PARIS: Three countries are in the running to host World Expo 2030: Saudi Arabia (in Riyadh), the Republic of Korea (in Busan) and Italy (in Rome).

The host country will be elected by member states of the Bureau International des Expositions during the organization’s 173rd general assembly, taking place on 28 November.

• Saudi Arabia’s candidature is for a World Expo in the city of Riyadh between 1 October 2030 and 31 March 2031 under the theme “The Era of Change: Together for a Foresighted Tomorrow.”

• The Republic of Korea’s candidature is for a World Expo in the city of Busan between 1 May and 31 October 2030 under the theme “Transforming Our World, Navigating Toward a Better Future.”

• Italy’s candidature is for a World Expo in the city of Rome between 1 May and 31 October 2030 under the theme “People and Territories: Regeneration, Inclusion and Innovation.”

During the 173rd General Assembly on 28 November, following Expo progress reports, each of the three candidates will make final presentations of their Expo projects.

Eligible and present member states of the BIE, represented by government-appointed delegates, will then vote for the World Expo 2030 host country by secret ballot using electronic voting. Each member state has one vote.

BIE rules stipulate that in the case of more than two candidates, a candidate must gather two-third of votes cast to be elected outright.

With three countries in the running to host World Expo 2030, if no candidate gathers two-third of votes cast in the first round, the third-place candidate is eliminated and the two remaining candidates will immediately move into a second round. The host country of World Expo 2030 will then be elected by a simple majority.

World Expos, officially known as International Registered Exhibitions, are global gatherings of nations addressing universal challenges of our time. These unparalleled global events offer a journey inside a chosen theme through engaging and immersive activities.

Taking place every five years and lasting up to six months, World Expos welcome tens of millions of visitors, allow countries to build extraordinary pavilions, and transform the host city for years to come.

The most recent World Expo, Expo 2020 Dubai, took place under the theme “Connecting Minds, Creating the Future,” and received over 24 million visits.

The next World Expo, Expo 2025 Osaka Kansai, will take place between April 13 and Oct. 13, 2025, under the theme “Designing Future Society for Our Lives.”

RIYADH: Lebanese beauty queens Maya Aboul Hosn and Yasmina Zaytoun made a surprise visit to Saudi Arabia on Tuesday as guests at the “Arabian Roots and Routes” event hosted by the Lebanese Embassy in Riyadh.

Aboul Hosn shared with Arab News her first impressions while visiting Riyadh, this year’s host for World Tourism Day, for the first time.

She said: “I love this place. The thing I most love here are the people. They’re very welcoming and very helpful.”

Zaytoun returned only months after she attended the Forbes Middle East Women’s Summit in May, chaired by Princess Noura bint Faisal Al-Saud.

Zaytoun said: “In the past year I’ve visited so many cities and I fell in love with so many places, but it’s rare to find a city where there is a view of the future and culture at the same time.

“And Riyadh has the culture, the history, the future all at the same time.”

The women were spotted during Tuesday’s event, and Lebanese pride was in their eyes as they heard diplomats and ministers give speeches that focused on Lebanon’s natural, cultural, and historical treasures.

Zaytoun and Aboul Hosn became symbols of Lebanese beauty in the 2022 Miss Lebanon beauty pageant — the first to take place since 2018.

The crown of Miss Lebanon 2022 was given to Zaytoun with Aboul Hosn the first runner-up.

Aboul Hosn will represent Lebanon at Miss Universe in El Salvador in November, competing with over 130 countries for the prestigious pageant title.

Zaytoun took part in the 2022 edition of Miss Universe and will go on to compete in India, this time at Miss World, in December.

“Arab beauty, I can say, (is) fierce, strong and very ambitious,” Aboul Hosn said.

Zaytoun added: “What I would do is raise my voice more and more to show them who we really are, how strong we are, how ambitious we are.

“Because Arab women are the mix of everything: of being strong, being independent, being beautiful, being smart. And I really want to show this to the world.”

In the world of beauty pageants, Miss Universe and Miss World are the most iconic.

Aboul Hosn said: “I would advise them (models) to dream big. Embrace your uniqueness. And the most important thing is to break barriers and to create a world where there’s equality and everyone can achieve their dreams.

“I need to tell all the women in the world or the teenagers in the world that they are beautiful just the way they are.

“Just the way you look, with your imperfections in your face, in your body. Just love yourself just the way you are. And don’t let anyone change you.”

The beauty queens are from small towns and the odds were stacked against them rising to the top of their profession.

Aboul Hosn, 25, hails from the small village of Btekhnay in Mount Lebanon while Zaytoun, 21, comes from Kfarchouba in the southern region of the country.

Zaytoun is currently studying journalism while Aboul Hosn is a host of LBCI’s daily show “Morning Talk.”

Optimism in creating a bright future is synonymous with being Lebanese, the women said.

“Lebanon is a place where people are struggling, but they still find hope. They are fighting, but they’re still smiling and being happy,” said Zaytoun.

“The word resilience is the definition of being Lebanese.”

Aboul Hosn said: “Since I was a child I’ve had a very supportive family who always helped me to reach my goals, reach my dreams, and never prevented me from achieving my dreams.”

From Beirut to Riyadh, Aboul Hosn and Zaytoun are joining hands with Saudi women to showcase to the world a new Middle East — a region bursting with ambition, inspiration, and creativity.
