Ingredients
3 tablespoons red vinegar
1 teaspoon honey
1 teaspoon maple syrup
1/2 teaspoon stone-ground mustard
2 teaspoons grapeseed oil
7 cups loosely packed baby arugula
2 cups red grapes, halved
2 tablespoons toasted sunflower seed kernels
1 teaspoon chopped fresh thyme
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Preparation
1. Combine vinegar, honey, syrup, and mustard in a small bowl. Gradually add oil, stirring with a whisk.

Porcini, artichoke and parsley salad
Ingredients
2 cups water
3 1/2 tablespoons fresh lemon juice, divided
2 large artichokes (about 12 to 14 ounces each)

1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
1 canned anchovy fillet, finely chopped (about 1 teaspoon)
3 tablespoons extra-virgin olive oil
1/2 cup coarsely chopped fresh flat-leaf parsley
6 ounces very thinly sliced fresh porcini or cremini mushrooms
5/8 ounce aged cow’s-milk cheese (such as Robusto or Gouda), cut into small pieces (about 1/4 cup)
Preparation
1. Combine 2 cups water and 2 tablespoons juice in a large bowl. Cut stem of each artichoke to within 1 inch of base; peel stems. Remove bottom leaves and tough outer leaves, leaving tender heart and bottom. Cut each artichoke in half lengthwise. Remove fuzzy thistle from bottom with a spoon. Thinly slice each artichoke heart into 1/8-inch-thick slices; place in lemon water.
2. Combine remaining 1 1/2 tablespoons juice, thyme, pepper, salt, and anchovy in a small bowl. Gradually add oil, stirring constantly with a whisk until combined.

2 quarts water
1 teaspoon salt
2 cups (1-inch) cut green beans (about 1/2 pound)
1/4 cup finely chopped shallots (about 2 medium)
2 fire-roasted piquillo peppers, chopped
1 (15-ounce) can chickpeas (garbanzo beans), rinsed and drained
1 garlic clove, minced
3 tablespoons light mayonnaise
2 tablespoons sherry vinegar
1 teaspoon Spanish smoked paprika
4 cups arugula
1 (7.8-ounce) jar premium tuna, packed in oil, drained and flaked
1/4 cup (1 ounce) grated fresh Parmesan cheese

2. Bring 2 quarts water and salt to a boil. Add green beans; cook 4 minutes or until beans are crisp-tender. Drain and rinse with cold water; drain. Combine green beans, shallots, peppers, chickpeas, and garlic in a large bowl.
