If I were to ever come up with a quote about food, it’d probably be something about breakfast because I passionately love breakfast and believe in the benefits of having a healthy breakfast with variations every day. A new study shows that coffee is a pain reliever. So here I have a new coffee recipe that will help you to stay healthy the whole day.
My second recipe is yet again a winter special seafood dish, which provides some important health benefits. It’s usually easy to prepare, and tastes delightfully light and fresh. A lot of people are intimidated to make seafood at home. Maybe because it looks and tastes so aristocratic and cultured. The thing to remember is not to overcook the fish. Sole is a fresh water fish and has good source of protein and contains all essential amino acids and is low in fats. Similarly, a soup can do what a medicine never can — soothe and relax you in an inexplicable way. It’s by far the most comforting food, not to mention, healthy and delicious too.
Recipe 1
COFFEE PANCAKES (Energy booster)
Serves : 2
Preparation time: 20 minutes
Ingredients:
1 egg
12.5 g of Nescafe cappuccino (1 sachet)
1 tablespoon of dark chocolate (melt it in a double boiler)
2 tablespoon of brown sugar/honey/jaggery/dates syrup
2 tablespoon of bran bread crumbs/oats powder/flour
1 tablespoon of desiccated coconut powder
METHOD:
1]Mix all the above ingredients in a deep bowl with the help of a hand beater and keep aside.
2]Grease a medium size nonstick pan with coconut oil.
3] For using the round cutters, make sure to grease them.
4] Place the cutters in the pan. Pour the batter in the cutters and cover it with a lid for a minute.
5]Flip it carefully with the help of a flat spoon and gradually remove the molds.
6] Dish it out in a plain serving dish and serve it with honey or chocolate syrup.
7]Enjoy with hot coffee or tea.
RECIPE 2
BAKED SOLE FISH
Serves: 2
Preparation time: Half an hour
Cooking time: Half an hour
Ingredients:
6 to 8 sole fish pieces
1 tablespoon of Tandoori masala
Juice of 1 lemon
1 teaspoon of chat masala
2 teaspoon of olive oil
1 tablespoon of garam masala
Salt as required
2 tablespoon of yogurt
1 teaspoon of paprika
1 teaspoon of garlic powder
A pinch of red color
METHOD:
1]Wash fish pieces thoroughly, keep it in a strainer for fifteen minutes and later pat dry the pieces.
2]In a small bowl, whisk together lime juice, olive oil with a dash of salt and garlic powder. Place the fish pieces in it and combine all the ingredients well and leave it to rest for 10 minutes.
3]In a separate small bowl, pour yoghurt along with paprika powder, red color, tandoori masala and garam masala, and rub it over the pieces.
4]Place the pieces in a lightly-oiled baking dish or pan.
5]Bake it in a preheated oven at 180 C for 10- 15 minutes. Do not overcook.
6]Remove it from the oven and garnish it the way you like.
7]Serve with white rice, roasted potatoes or a simple salad.
RECIPE 3
MIX VEGETABLE SOUP
Prep time: 10 minutes
Cooking time: 20 minutes
Total time: 30 minutes
Serves: 3-4
Ingredients:
1 cup shredded cabbage
½ cup finely chopped baby carrots
½ cup sliced mushrooms
2 piece of zucchini
½ cup chopped capsicum/bell pepper (red or green or yellow)
2 florets of broccoli and cauliflower
¼ cup finely chopped french beans
¼ cup finely chopped onion
2 teaspoon finely chopped celery (optional)
1 teaspoon finely chopped garlic
3 cups water
2 teaspoon soy sauce or as required
½ teaspoon black pepper powder
2 tablespoon of tomato puree
1 tablespoon oil
Salt as required
Instructions:
1]Rinse and shred cabbage
2]Rinse, wipe and then slice the mushrooms and other veggies.
3]Rinse and finely chop the french beans, onions and garlic.
4]Heat oil in a pan, add onions and garlic. Sauté till the onions are translucent, then add the chopped mix veggies and stir well.
5]Sauté on a medium flame for 4 to 5 minutes.
6]Add water, moong sprouts and tomato puree, stir well. Saute again for 2 minutes.
7]Add soy sauce, black pepper and salt. Stir again.
8]Cover the pan and simmer the soup for 10 to 11 minutes on a low to medium flame.
9]Then check the seasonings and add more salt or black pepper if required.
1]Serve the soup plain or accompanied with some boiled noodles or steamed rice.
